Isabel Valente's Portuguese Vegetable Soup

Isabel came to our church last summer to help out with Summer Bible School. She stayed in our home for a few days and one night we made this soup. It was delicious. It is traditional Portuguese Soup and worth your time to try it out.




Portuguese vegetable soup

Ingredientes:

1.750 l of water (more than a half of a gallon)
4 potatoes
3 cloves of garlic
1 onion
2 carrots
salt as required
500 g green beans cuted (or peas, white cabbages…)
5 soupspoon of Olive oil (not light. Italien, Spanish or Portuguese)


- Cut one carrot, peal and cut the potatoes, garlic and the onion. Put it in a pan in the boiling water during more or less 15 minutes.
- Make it into a pure (like baby soup)
- Add the olive oil, green beans and the carrot cutted during more or less 15 minutes (not strong fire).
- Season with salt.


Remarks: If you think the soup has too much water, add a bit of spaghetti.
You can use some spices as you like or some porc meat or smoked meat, or 1 chicken stock cube.
You can add a tomato to the pure, but the soup will be spoiled sooner.
